Pollo al ajillo is Spanish garlic chicken; this practical oven-finished version adds bell peppers and onion for a complete sheet-pan-style meal. The chicken stays juicy beneath crisped edges, while softened garlic, smoked paprika, lemon, and sherry vinegar form a savory, tangy pan sauce. It is aromatic rather than chile-hot, so heat can be added separately at the table.

Pollo al ajillo—literally “chicken with garlic”—is a familiar Spanish preparation with regional and household variations. It commonly combines browned chicken, plentiful garlic, olive oil, and wine or another flavorful liquid; herbs and finishing acids vary. Roasted peppers are an adaptation in this card rather than a claim about one canonical regional recipe.
Noteworthy ingredients
- Spanish smoked paprika (pimentón): Whole Foods or Safeway; ordinary sweet paprika works, though it will be less smoky.
- Sherry vinegar: Whole Foods or Safeway near specialty vinegars. Substitute red-wine vinegar plus a small pinch of sugar.
- Cava: Safeway or Whole Foods. Any dry Spanish sparkling wine labeled Brut works for the cocktail.
- Garlic: Eight cloves are intentional. Roasting softens its bite considerably.
Prep — 20 min
- Heat the oven to 425°F. If serving rice, start it according to its package directions.
- Pat the chicken dry. Season it with ¾ teaspoon salt, black pepper, 1 teaspoon smoked paprika, and ½ teaspoon dried thyme.
- Core the peppers and cut them into ¾-inch strips. Slice the onion into thick wedges.
- Thinly slice 6 garlic cloves; lightly crush the remaining 2 cloves.
- Zest half the lemon, then cut the lemon in half. Chop enough parsley to make 3 tablespoons.
- Toss the peppers, onion, and 2 crushed garlic cloves with 1 tablespoon olive oil, ¼ teaspoon salt, and a little black pepper in a roasting pan.
Cook — 40 min
- Roast the vegetables for 10 minutes while the chicken is seared.
- Heat 1½ tablespoons olive oil in a large skillet over medium-high. Add the chicken in one layer and brown for 4–5 minutes on the first side and 2 minutes on the second. Work in batches if necessary; it does not need to be cooked through yet.
- Lower the heat to medium. Add the sliced garlic and cook for 30–45 seconds, just until fragrant and pale gold; do not let it burn.
- Stir in ½ teaspoon smoked paprika, then immediately add ½ cup chicken stock and 1 tablespoon sherry vinegar. Scrape up the browned bits.
- Transfer the chicken and garlic-pan liquid to the roasting pan among the vegetables. Roast for 18–22 minutes, until the thickest chicken pieces reach 165°F and the peppers are tender.
- Stir the lemon zest, juice from half the lemon, and 2 tablespoons parsley into the pan juices. Taste and add salt, pepper, or another teaspoon of sherry vinegar as needed.
- Broil for 1–2 minutes only if more browning is desired, watching the garlic closely.
Serving
Spoon rice into shallow bowls, add the peppers and onion, then place sliced or whole chicken thighs on top. Finish with pan sauce, parsley, and lemon wedges. For the child, serve an unsauced inner slice of chicken with rice and sweet pepper strips; keep chile at the table for Tony. Crusty bread is excellent for the garlicky juices. Refrigerate leftovers within two hours and use within 3 days; reheat gently with a spoonful of stock.
