Pileći paprikaš is a comforting chicken stew built around onions, peppers, and generous paprika. This version simmers chicken thighs until tender, then enriches the brick-red sauce with a little yogurt or sour cream. Croatian chicken versions vary by household and may be served with dumplings, noodles, potatoes, or bread. Cumin and coriander appeared in the original brief as an optional pantry twist, but they are not presented here as defining traditional seasonings.

Noteworthy ingredients

  • Sweet Hungarian or Croatian-style paprika: Use a fresh, fragrant sweet paprika rather than smoked paprika for the main flavor. Whole Foods, Safeway, or H Mart should have Hungarian paprika.
  • Hot paprika (optional): Adds controlled heat without changing the sauce’s character. Cayenne can substitute, used sparingly.
  • Dry Croatian white wine for gemišt: Graševina is a classic regional choice when available, but another crisp dry white works. Whole Foods or a well-stocked Safeway may carry Croatian bottles.
  • White grape juice: Choose a not-too-sweet juice for the zero-proof pairing; sparkling white grape juice can replace both juice and sparkling water.

Prep — 20 min

  1. Pat the chicken dry and season it with 3/4 teaspoon salt and black pepper.
  2. Dice the onion. Core the peppers and cut them into strips. Mince the garlic.
  3. Stir the sweet paprika, optional hot paprika, and optional cumin/coriander together in a small bowl.
  4. Thinly slice half the cucumber. Grate the other half and mix it with 1/2 cup yogurt, a squeeze of lemon, salt, and pepper for the cooling side.
  5. Rinse the rice until the water is mostly clear.

Cook — 45 min

  1. Cook the rice according to package directions. Rest it covered for 10 minutes and fluff.
  2. Heat oil in a Dutch oven over medium-high heat. Brown the chicken for 3–4 minutes per side, then transfer it to a plate.
  3. Reduce heat to medium. Cook the onion and peppers with a pinch of salt for 7–8 minutes until softened.
  4. Add the garlic for 30 seconds. Remove the pot briefly from direct heat, stir in the paprika mixture and flour, then immediately add the stock while stirring so the paprika does not scorch.
  5. Return the chicken and its juices to the pot. Bring to a gentle simmer, cover, and cook for 25–30 minutes until tender and at least 165°F.
  6. Whisk 1/4 cup yogurt with 1/2 cup hot sauce from the pot to temper it. Lower the heat and stir the mixture back into the stew without boiling hard.
  7. Add lemon juice to taste, adjust salt and pepper, and finish with chopped parsley.

Serving

Serve the paprika chicken and sauce over rice with cucumber yogurt alongside. Keep the main pot sweet and mild; offer hot paprika or hot sauce for Tony. Bread is useful for the sauce, and buttered noodles can replace rice. Refrigerate leftovers for up to 3 days and reheat gently so the dairy-enriched sauce stays smooth.
