This recipe follows the brief's chicken direction and adds lemon and garlic, so it is an inspired adaptation rather than a traditional lamb tavë kosi.
Noteworthy ingredients
- Full-fat plain yogurt: Whole-milk Greek yogurt gives a thicker topping; ordinary whole-milk yogurt gives a softer custard. All listed stores carry suitable options. Avoid sweetened or flavored yogurt.
- Raki: A clear fruit spirit known across Albania and the Balkans. It may require a specialty liquor store and is optional; unaged grape brandy or vodka is a practical substitute for the adult highball.
- Dried mint: Used here in the drinks rather than claimed as a required traditional seasoning for tavë kosi. Walmart, Safeway, Whole Foods, or H Mart should carry it; fresh mint also works.
Prep — 25 min
- Heat the oven to 375°F. Butter a 2-quart baking dish if not using an oven-safe skillet.
- Pat the chicken dry and cut it into large bite-size pieces. Season with 3/4 teaspoon salt, black pepper, and oregano.
- Finely dice the onion and mince the garlic. Zest the lemon, then cut it in half.
- Rinse the rice until the water is mostly clear.
- In a bowl, whisk 1 1/2 cups yogurt, eggs, flour, half the lemon zest, 1 minced garlic clove, 1/2 teaspoon salt, and several grinds of black pepper until smooth.
- Dice the cucumber and tomato for the side salad. Keep them separate until serving so they do not become watery.
- For the drink base, whisk the remaining 1/2 cup yogurt with 1/2 cup very cold water and a pinch of salt until smooth; refrigerate.
Cook — 50 min
- Heat the olive oil in an oven-safe skillet over medium-high heat. Brown the chicken for 3–4 minutes per side; it need not cook through. Transfer to a plate.
- Reduce heat to medium. Cook the onion for 4 minutes. Add the remaining garlic and rice; stir for 1 minute.
- Add the chicken broth and scrape up the browned bits. Simmer uncovered for 6–8 minutes, stirring once, until the rice begins to soften but remains firm and much of the broth is absorbed.
- Return the chicken and any juices. If using a baking dish, transfer the chicken-rice mixture now and spread it evenly.
- Pour the yogurt-and-egg mixture evenly over the top; do not stir it into the rice.
- Bake for 30–35 minutes, until the topping is set and lightly golden, the rice is tender, and the chicken reaches 165°F. If more color is wanted, broil for 1–2 minutes while watching continuously.
- Rest for 10 minutes before cutting. Finish with a little lemon juice and the remaining zest.
Serving
Spoon or cut the bake into generous squares and serve with cucumber and tomato dressed simply with lemon, salt, and olive oil. Give the child's portion from the softly set center and offer extra plain yogurt if desired. Refrigerate leftovers within 2 hours and keep for up to 3 days. Reheat covered in a 325°F oven or gently in the microwave so the yogurt layer does not toughen.
